1. Gnocchi
Crush the potato pulp to obtain a smooth and homogeneous mash. Stir in the flour and egg yolks and mix gently. Divide the gnocchi dough into 3 and form into 40 cm long sausages. Cut the sausages into pieces to obtain gnocchi, then roll them up and score them with a fork. Let dry at room temperature on a lightly floured tray.
2. Cooking the chicken
Steam the sliced chicken wrapped in cling film for 10 to 12 minutes. Let them cool and finish cooking in a hot pan so as to brown them well. Season with salt and pepper.
3. cooking mushrooms
Drain the mushrooms and rinse them. Sauté them in a pan with a knob of butter.
4. Cooking the gnocchi
Bring water to a boil with a drizzle of olive oil and then plunge the gnocchi into simmering water. Drain the gnocchi and fry them with the sliced chicken and a little pesto.
5. Editing
On a plate, arrange zucchini strips and the various BROVER ingredients. Sprinkle with a little herbs, pesto and parmesan shavings.
