Kiwi pastry: tips, tricks and recipes from pastry chefs to perfectly master its combination and how to incorporate it into your creations and desserts.

In the kitchen, kiwifruit inevitably evokes exoticism and travel.

Our kiwis in light syrup are available all year round and will delight gourmets in many recipes and uses. They are already sliced but very easy to rework to fit your recipe.

A fruit that we love for its aesthetics

In recipes, kiwi is appreciated for its juicy, sweet and slightly tart flesh, for its tender texture and its bright green colour. We use this versatile fruit in a variety of culinary preparations to add an exotic and refreshing touch.

In a classic pie, on a cake, in a fruit salad, but also with many more surprising specialties. Use your imagination to put a little green and pep in your culinary creations.

The kiwi is often used as a decorative garnish for its beautiful green color and attractive cut where the green of the fruit contrasts nicely with the white of its heart, set with small black grains.

Kiwi in surprising recipes

Here are some new and unconventional ideas for surprising pastries. The tangy and vitamin-rich flavour of kiwi goes wonderfully with recipes rich in taste such as galette des rois or gingerbread.

Use the kiwis in BROVER syrup for an original galette des rois with kiwis as an inclusion or as decoration on the galette once cooked.

Dare to combine the spicy notes of a tasty gingerbread with the fruity notes of kiwi.

Put your kiwis in the spotlight!

The kiwi is pretty! This makes it a great ally of verrines or other desserts alternating layers. As this fruit marries the sweetness of a cream perfectly, whether it is buttercream, mascarpone cream, pastry cream or whipped cream, you can combine them without any limit of imagination. Think kiwi for all your verrines, tarts and pies. Fill a shortcrust pastry with it that has been smoothed with cream, sprinkle it on yoghurt, decorate a trifle, a Pavlova or a sweet focaccia.

Or use them pureed…

You can also create a delicious kiwi smoothie or mousse or flavour various preparations with this fruit.

Mix the kiwis in syrup to make a puree that you can incorporate into mousses, bavarois or creams. Be sure to adjust the sugar in the recipe, as the syrup is already sweetened.

You can also marble a mousse or a panna cotta by incorporating kiwi puree in syrup for an interesting visual and taste effect.

Finally, use his syrup!

Reduce the syrup from the kiwis to a thicker consistency to use as a topping or glaze on your desserts. This concentrated syrup can also be used to soak sponge cakes or flavor creams.
